Taste of China at Home Instant Pot General Tso’s Chicken

01 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces  

02  1/4 cup cornstarch  

03 4 Salt and pepper to taste 

04 1 Vegetable oil for frying (about 2-3 cups)  

05 1/4 cup soy sauce  

06 S1/4 cup hoisin sauce 

07  1/4 cup rice vinegar  

08   3 tablespoons granulated sugar   

09  2 tablespoons water  

10   1 tablespoon cornstarch  

11   1 tablespoon fresh ginger, minced  

12  2 cloves garlic, minced 

13   1/2 teaspoon red pepper flakes (adjust to taste for spiciness)

Step 1:Prep Chicken 

– Toss chicken pieces with 1/4 cup cornstarch for an even coat. – Season with salt and pepper to taste.

Step 2:Sauté Chicken 

Step 3:Sauce Prep 

– Heat 2 tbsp vegetable oil in Instant Pot on "Sauté" mode. – Brown chicken on all sides (5-7 mins). Avoid overcrowding; sauté in batches.

While chicken cooks, mix soy sauce, hoisin sauce, rice vinegar, sugar, water, and 1 tbsp cornstarch in a bowl.

Step 4:Pressure Cook  

– Once chicken is browned, return all to Instant Pot. – Pour prepared sauce over chicken, stir for even coating. – Close Instant Pot, set to "Manual" or "Pressure Cook" for 3 mins, ensuring the valve is set to "Sealing."

Step 5:Pressure Cook

When cooking is done, quick pressure release by turning the valve to "Venting" (watch out for hot steam).
