01 2-3 pounds of boneless pork shoulder, cut into 2-inch chunks

02 1 onion, roughly chopped 

03 4 cloves garlic, minced

04 1 orange, juiced 

05 1 lime, juiced

06 1 teaspoon ground cumin

07 1 teaspoon chili powder 

08 1 teaspoon oregano

09 1 teaspoon salt

10 1/2 teaspoon black pepper 

11 1 teaspoon paprika

12 1/4 teaspoon cayenne pepper (adjust to taste for spice)

13 1/4 cup chicken broth

14 2 tablespoons vegetable oil

Step By Step Guide For Making Instant Pot Carnitas

Step 1: Sear Pork

In Instant Pot's "Sauté" mode, sear pork cubes in batches until browned. Set aside. 

Step 2:Aromatics & Spices

Sauté onion, garlic, cumin, chili powder, oregano, salt, pepper, and cayenne for flavor. 

Step 3: Deglaze Pot 

Add orange and lime juice to deglaze, scraping up browned bits for Carnitas flavor. 

Step 4: Pressure Cook

Return pork, add broth. Pressure cook for 35 mins on high. 

Step 5:Natural Release

Allow natural pressure release for 10-15 mins, then manually release. 

Step 6:Shred & Crisp

Shred pork in Instant Pot. For crispy edges, broil on a baking sheet.
