01 2 cups of basmati rice, soaked for 30 minutes and drained  

02  1 pound of protein (chicken, lamb, or vegetables for a vegetarian version) 

03 2 large onions, thinly sliced  

04  2 tomatoes, chopped 

05   1/2 cup of yogurt 

06 2 tablespoons of ghee (clarified butter) or oil 

07  A handful of fresh coriander leaves   

08 A handful of fresh mint leaves    

09  Whole spices (bay leaves, cardamom, cinnamon, cloves, and star anise) 

10 Ground spices (cumin, coriander, turmeric, red chili powder, and garam masala)   1 tablespoon cornstarch  

11  Salt to taste 

Step 1:Sauté Onions & Spices

– In Instant Pot, sauté onions until golden. – Add whole spices; sauté for a minute.

Step 2:Add Protein

– Toss in chicken, lamb, or veggies. – Sauté until cooked or golden.

Step 3:Spices & Tomatoes

– Stir in ground spices. – Add tomatoes; sauté until soft.

Step 4:Layer with Rice

– Carefully layer soaked basmati rice. – Don't stir.

Step 5:Yogurt & Herbs

Spread yogurt; sprinkle herbs. 

Step 6:Cook

– Pour water to cover rice. – Pressure cook on low       for 5 mins. – Natural release for 10 mins, then quick release.

Step 7:Garnish 

Amp up flavor with saffron milk, herbs, and fried onions.
